| Description: | The statistics contain monthly and annual information on slaughter volumes (number of carcasses and weight in kilos), average carcass weights and producer prices. The statistics are based on data collected monthly from slaughterhouses and on information contained in the Bovine Register. In addition, the annual statistical information is based on data collected from farmers and, for on-farm slaughter, on estimates.
